Hearty kale, combined with spicy pepper sausages and creamy potatoes – a true comfort dish for cold days! Perfectly seasoned and traditionally prepared, this recipe provides warming enjoyment on the plate. Ideal for a rustic lunch or a hearty dinner.
Ingredients:
- 500 g kale (fresh or frozen)
- 600 g potatoes (preferably waxy)
- 300 g fresh pepper sausages (or other sausages of choice)
- 1 onion
- 2-3 tbsp oil (z.B. Sunflower oil)
- 500 ml vegetable broth
- 1 tsp mustard
- Salt and pepper to taste
- A pinch of nutmeg (optional)
- 1-2 bay leaves (optional)
Preparation:
- Preparation of the kale: If you are using fresh kale, wash the leaves thoroughly and remove the thick stems. Cut the leaves into small pieces. If using frozen kale, you can skip this step.
- Prepare the potatoes: Peel the potatoes and cut them into cubes.
- Sauté the onion: Heat the oil in a large pot and add the diced onion.Sauté them over medium heat until they are translucent.
- Add kale: Add the prepared kale to the pot and sauté briefly. This helps to intensify the flavor.
- Add broth and potatoes: Pour in the vegetable broth and add the potato cubes along with the mustard and bay leaves. Bring everything to a boil.
- Cooking: Reduce the heat and let the dish simmer with the lid on for about 30-40 minutes until the potatoes are soft. Stir occasionally.
- Sauté pepper sausages: In a separate pan, sauté the pepper sausages in a little oil until they are nicely browned.
- Taste: Remove the bay leaves and season the kale with salt, pepper, and a pinch of nutmeg to taste.
- Serve: Arrange the kale with the potatoes on plates and place the fried pepper sausages on top.
