Tomahawksteak ChimiBuraschetta

A real highlight for grill fans: Reverse grilled Tomahawk steak with a crispy crust, combined with fresh ChimiBuraschetta on toasted bread. Juicy, aromatic, and perfect for a special grilling evening.

Ingredients:

  • 1 Tomahawk steak (approx. 1.5 to 2 kg)
  • Salt
  • Pepper
  • Optional: Herbs (z.B. Rosemary, Thyme)
  • Optional: Garlic

Step 1: Prepare the steak

1. Adjust temperature: Take the Tomahawk steak out of the refrigerator at least 1-2 hours before grilling so it can reach room temperature.

2. Season: Generously rub the steak with salt and pepper.You can also add herbs and crushed garlic to intensify the flavor.

Step 2: Indirect Grilling

3. Prepare the grill: Preheat your grill to a low temperature (about 100-120 °C). Make sure one side of the grill is ready for indirect grilling.

4. Grill the steak: Place the steak on the indirect heat of the grill and close the lid. Let it cook slowly until the internal temperature reaches about 45 °C.

Step 3: Resting Time

5. Let the steak rest: Remove the steak from the grill and let it rest for about 10-15 minutes. This helps to keep the juices in the meat.

Step 4: Searing

6. Prepare high temperature: Increase the grill temperature to high (about 250-300 °C) or use a grill pan on the stove.

7. Sear the steak: Sear the steak on each side for about 2-3 minutes until it has a nice crust. This gives the steak color and flavor.

Step 5: Serve

8. Final resting time: Let the steak rest again for 5-10 minutes after searing.

9. Slice and serve: Cut the steak against the grain into thick slices and serve it with sides of your choice. 

 

Additionally, here is the preparation for my ChimiBuraschetta:

  • 1 bunch of fresh parsley or other kitchen herbs
  • 1 red onion
  • 2 cloves of garlic
  • Juice of one lime
  • High-quality olive oil
  • 1/2 teaspoon peppercorns
  • 1/2 teaspoon chili flakes (increase for more heat if needed)
  • 1 teaspoon coarse salt
  • 1 teaspoon thyme
  • Chop 10 cherry tomatoes roughly and combine everything.

Depending on the number of people, slice fresh bread and arrange nicely. Spread the mixture on the bread slices and add some burrata on top.
