A true highlight for barbecue fans: reverse-grilled tomahawk steak with a crispy crust, combined with fresh chimiburaschetta on toasted bread. Juicy, aromatic, and perfect for a special barbecue evening.
Ingredients:
- 1 tomahawk steak (approx. 1.5 to 2 kg)
- Salt
- pepper
- Optional: herbs (z.B. rosemary, thyme)
- Optional: garlic
Step 1: Prepare the steak
1. Adjust temperature: Remove the tomahawk steak from the refrigerator at least 1-2 hours before grilling so it can reach room temperature.
2. Season: Rub the steak generously with salt and pepper. You can also add herbs and crushed garlic to intensify the flavor.
Step 2: Indirect grilling
3. Prepare the grill: Preheat your grill to a low temperature (approx. 100-120°C). Make sure one side of the grill is set for indirect grilling.
4. Grill the steak: Place the steak over the indirect heat of the grill and close the lid. Let it cook slowly until the internal temperature reaches about 45°C.
Step 3: Rest time
5. Let the steak rest: Remove the steak from the grill and let it rest for about 10-15 minutes. This helps retain the juices in the meat.
Step 4: Browning
6. Prepare for high heat: Increase the grill temperature to high (approx. 250-300 °C) or use a grill pan on the stovetop.
7. Sear the steak: Sear the steak for about 2-3 minutes on each side until it develops a nice crust. This will add color and flavor to the steak.
Step 5: Serve
8. Final resting time: After searing, let the steak rest again for 5-10 minutes.
9. Slice and serve: Cut the steak into thick slices against the grain and serve with your choice of side dishes.
In addition, the preparation for my ChimiBuraschetta:
- 1 bunch of fresh parsley or other herbs
- 1 red onion
- 2 cloves of garlic
- Juice of one lime
- High-quality olive oil
- 1/2 teaspoon peppercorns
- 1/2 teaspoon chili flakes (increase if needed for more spice)
- 1 teaspoon coarse salt
- 1 teaspoon thyme
- Roughly chop 10 cherry tomatoes and combine everything.
Depending on the number of people, slice fresh bread and tie them together neatly. Spread the mixture on the bread slices and top with some burrata.
